
Laboratory Capabilities
We have two laboratories at VMN – a product development laboratory and a microbiology laboratory. A controlled temperature and humidity chamber allows us to perform accelerated stability studies.
Our product development laboratory is fully equipped and staffed to make virtually any combination of ingredients at volumes up to two gallons. We routinely monitor and document pH, density and Brix during all phases of product development. Our ability to mimic a production pasteurization environment in our laboratory allows us to create laboratory bench samples that closely match the taste profile, texture, density, pH and Brix of the production scale product.
Our fully equipped in-house microbiology laboratory performs general microbiology evaluations including pathogen screening, bacteria counts, and yeast and mold analyses.
